3/4 cup warm water (105-115°F)
1 tbsp olive oil
2 cups all-purpose flour
1/2 cup semolina flour
2 tsp sugar
1 tsp salt
2 1/4 tsp yeast

Recipe

Fill the bread machine pan with the ingredients in the order listed, being careful not to add the yeast directly to the salt.

Turn on the dough setting and let the bread machine make the dough. This takes about 90 minutes.

Remove the dough from the bread machine onto a lightly floured surface. Very carefully, with the palms of your hands, flatten and shape the dough into an oval shape. Like folding a letter, first fold the bottom third of the dough, longways, up and back onto itself, pressing gently. Rotate dough 180° and do the same, folding a third of the dough longways on the top of the just folded dough.

Place the folded dough fold-down on a baking sheet lined with parchment paper and cover with a damp towel for 30 minutes to proof.

Preheat the oven to 450°F and place an empty baking sheet on the bottom oven rack. Just before putting into the oven, score the dough longways or in hatches. Pour 1/4 cup water into the empty baking sheet inside the oven to create steam, then place the dough into the oven. Bake 20-25 minutes.

Remove the bread from the oven, checking for doneness, and let cool on a wire rack, resisting the urge to eat immediately.
